The fruit comes from one hectare on the steeper, limestone-rich slopes of the Valdivilla hillside at Santo Stefano Belbo, planted by his grandfather to the old Moscato di Canelli cultivar. Vine age, southerly exposure and the blue tufa of clay and limestone give unusually intense, golden bunches and a wine with textural depth and vinosity well beyond the norm for the grape. The bottles are then held for later release in large wooden boxes packed with sand, a traditional local method of maturation that moderates temperature and humidity and shuts out light entirely.\u003c\/p\u003e\n\u003cp\u003eComplex and developed, and it will hold for several more years.
