Garganega does the heavy lifting: it ripens late, keeps its acidity and brings white flowers and stone fruit. Trebbiano di Soave, a far finer grape than its Tuscan namesake, adds cut and lift. The vines are farmed sustainably, and the fruit is pressed gently, fermented cool in steel and rested briefly on fine lees, with no oak at all.\u003c\/p\u003e\n\u003cp\u003eDry and light, with pear and blossom up front and a nutty twist at the end.
