The first vineyard purchase came in 1993 and this east-facing plot followed. Fruit is double-sorted, fully de-stemmed and fermented on wild yeast in open tanks, then given eighteen months in barrel with fifteen to thirty per cent new wood.\u003c\/p\u003e\u003cp\u003eExpect dark cherry and a little woodsmoke over fine, chalky tannin, with the Jurassic limestone below showing as a savoury edge.
