Renato Vacca, whose great-uncle founded that co-operative, has run it independently since the late 1990s. This classic bottling blends the estate's parcels, fermented with indigenous yeasts and macerated at length, then aged about two years in big Slavonian casks and a further spell in bottle to keep its perfume and tannic frame intact.\u003c\/p\u003e\u003cp\u003ePale but firm, with rose, tar and sour cherry and that drying Nebbiolo tannin. The half bottle suits two over dinner and matures a little faster than a full one.
