His great-uncle, Domizio Cavazza, founded the village's original co-operative and is usually credited with establishing Barbaresco as a wine in its own right. This cru lies in neighbouring Neive on calcareous marl and gives perfume and finesse more than weight. Farming is sustainable and low-intervention, and after an extended fermentation on skins the wine goes into large oak casks in the traditional Langhe manner, then rests for a long time before release.\u003c\/p\u003e\u003cp\u003eRose, tar and red cherry over drying tannin.
