It gives a firm, textural white with real capacity to age, quite unlike the lighter Cortese grown nearby. The hills here are clay and limestone at moderate altitude.\u003c\/p\u003e\u003cp\u003eServe at 11 degrees with rich fish dishes, veal or aged cheese.
