Alongside the Chardonnay that made the property famous, the estate planted Sauvignon Blanc and Semillon, the classic pairing of the Graves, on soils of clay and marine sediment at some altitude. The wine takes its name from the Monaldeschi della Vipera, the family who built the castle and carried a serpent on their arms. It is largely fermented in stainless steel, with a portion given time in oak, and ages considerably better than most Italian Sauvignon.
