Altitude and cooler air slow ripening, keeping the acidity and perfume this side of the hill is known for. The DOCG allows only Sangiovese Grosso. After an extended fermentation on skins, the wine spends at least two years in oak, mostly traditional Slavonian botti with some smaller casks, then more time in bottle.\u003c\/p\u003e\u003cp\u003ePerfumed, not heavy, with red cherry, dried rose and a savoury finish on fine tannin.
