Cavallotto does the opposite and gives Barbera a parcel within its Bricco Boschis monopole, named after the cuckoo, the cuculo, for reasons Alfio Cavallotto cannot explain either. The vines are more than fifty years old and cropped low. A western aspect and the high limestone content of the soil temper Barbera's naturally high acidity, and Alfio Cavallotto argues that this Barolo terroir pushes the variety's aromatics closer to Nebbiolo. The winemaking is unusual too: up to 18 days on skins, a long maceration for Barbera, then 24 months in the same mature Slavonian casks that hold the estate's Nebbiolo, which builds texture without adding oak flavour.\u003c\/p\u003e\n\u003cp\u003eReady now and holding for eight to ten years, it works with bollito misto, braised pork and hard cheese.
