That drop in elevation and the very high proportion of limestone in the soil set the wine apart from Cavallotto's flagship: where San Giuseppe is built on power, Vignolo is gentler in structure, purer in fruit and more supple in texture. The vines were planted between 1948 and 1966, and the combination of that age, the terroir and organic farming across the estate accounts for the wine's character. Vinification follows the traditional pattern used throughout the cellar: 28 days on skins, then five years in large, neutral casks before release, with no small-barrel oak at any stage.\u003c\/p\u003e\n\u003cp\u003eMore approachable young than the San Giuseppe but good for two decades, it suits braised veal, mushroom risotto and aged Toma.
