The Cavallotto family have been at Bricco Boschis since 1928, when Giacomo Cavallotto took it on; his sons Olivio and Gildo bottled their first wine in 1948 and began labelling single vineyards in 1970, and the fourth generation, Alfio, Giuseppe and Laura, now farm the 23 contiguous hectares organically. Scot lies at around 300 metres on the calcareous marl typical of the commune. The wine ferments with its own yeasts and macerates under a submerged cap for three or four days, then spends about six months in 50-hectolitre Slavonian oak casks and a further six months in cement before bottling, so the variety's dark fruit and savoury grip come through unmodified by new wood.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three or four years.
