Cavallotto takes a different route. Vigna Scot is 2.3 hectares of thirty-year-old vines within Castiglione Falletto's Monprivato, one of the most celebrated sites in Barolo, and the Dolcetto rows face east, making this a cooler, later-ripening corner of the vineyard. Mature vines and low yields give the fruit weight, and rather than tank the family raises the wine in cement and in 5,000-litre Slavonian botti. That choice does two things: it heads off Dolcetto's tendency to reduction, and it polishes tannins that can otherwise be coarse. The result is a serious, layered reading of a variety usually asked only to be cheerful.\u003c\/p\u003e\n\u003cp\u003eDrink over the next five years with salumi, pizza, braised sausage or a plate of tajarin.
