The vineyard lies in the ancient bed of the Walla Walla River, with barely a foot and a half of silty loam and basalt cobbles over compacted stone that plunges as deep as a hundred metres, conditions closer to the southern Rhône than to Oregon. Christophe Baron, who came here from a Champagne farming family, planted the site in 2001 and farms it organically and biodynamically, with yields held under 30 hectolitres per hectare. Whole clusters make up three-quarters of the natural ferment in concrete, and the wine then spends twenty-one months in large old French foudres.\u003c\/p\u003e\n\u003cp\u003eRaspberry, dried herb and white pepper, with a savoury undertow and tannins that stay supple. Serve a touch cool, around 16 degrees.
