The vines were planted by Benjamin Benoit's grandfather around 60 years ago and their deep roots produce low yields, which is where the depth and energy of the wine come from. The winemaking is deliberately identical across all the domaine's Chardonnays so that the differences between parcels come through: whole bunches pressed into used 600-litre barrels for fermentation and 12 months of lees ageing, after which the gross lees are decanted off and the wine rests on clean lees in stainless steel for a further six months, allowing bottling without filtration.
