The Ploussard vines are rooted in deep grey marl from the middle Liassic on a slope of 20 to 30%, steep by Burgundian standards if mild by those of the Jura. Natural springs run beneath the site and keep the soils humid, and that moisture, combined with old vines and low yields, gives this wine more density of flesh and tannin than Benoit's other Ploussards. Poulsard, called Ploussard in Pupillin, is a pale, thin-skinned variety that rarely makes a dark or heavy wine, so density here is a matter of texture rather than weight.
