The fruit here is hand-harvested from organically tended vines on gravelly shale soils just across the river from Savennières, ground that drains well and keeps the vines in balance. The intention is a straightforward vin de soif, made to be drunk while it is young, vibrant and fresh, so the fruit was fully destemmed and both fermented and raised in stainless steel for a mere six months. No oak is involved, and no sulphur was added until bottling. What arrives in the glass is the variety in its most direct Loire form: light in body, gently structured and firmly savoury.\u003c\/p\u003e\n\u003cp\u003eDrink over the next two or three years, lightly chilled at 14-16°C.
