It was wild fermented, with a third of the wine matured on lees in French oak puncheons from the Sirugue cooperage, and the rest kept in tank for freshness. This combination gives a Semillon with a slinky, lanolin-like texture, flavours of lemon pith, honeysuckle and grilled cashew, and a lively, mineral line. Dave Brookes of Halliday Wine Companion scored it 93 points.\u003c\/p\u003e\n\u003cp\u003ePour it with pan-fried whiting, chicken and tarragon pie, or a Caesar salad.
