The Bérêche family, based at Ludes on the Montagne de Reims, source this cuvée from the parcels of Brise Pot and Froide-Terre at 280 metres, bordering Mutigny, where topsoil of no more than thirty centimetres sits over dense Campanian chalk. The vines are more than forty years old. The blend is 70 per cent Pinot Noir and 30 per cent Chardonnay, fermented slowly in barrel and then aged on lees in bottle for 78 months before disgorgement with under 3 g\/L dosage. The result is a Champagne of depth and chalky, precise length.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and capable of a decade's development, it suits roast chicken, crab or a plate of charcuterie.
