Bérêche's fruit comes from Le Bateau in the north-east of the village and Chemin de Châlons at its southern end, both worked by Florent and Julien Mignon. The vines are more than 40 years old and were established by massale selection on chalky soils, which is where the balance between structure, finesse and fruit intensity in this cuvée begins. Raphaël Bérêche describes the release as ample but delicate, finishing in a cloud of chalk. Vinification is with indigenous yeasts in barrel, and the wine spent 54 months on lees before disgorgement with 3 g\/L dosage.\u003c\/p\u003e\n\u003cp\u003eDrinking now and rewarding a further three to five years.
