The Bérêche brothers knew the village well, having long drawn as much as 70 per cent of their Montagne cuvée from it, and in 2011 they bought a 0.4-hectare parcel of sixty-year-old Pinot Fin vines rooted in the clay and chalk of Les Chalois; Raphaël describes the decision as the easiest of his life. It is the estate's first and most prized Grand Cru holding. The wine was vinified with indigenous yeasts in oak barrels of up to 600 litres, then spent 48 months under cork before disgorgement, with a dosage of 3 g\/L.\u003c\/p\u003e\n\u003cp\u003eReady now and capable of a decade in the cellar.
