The juice comes from two sites in Avize, a Grand Cru village of the Côte des Blancs: Le Mont de Cramant, facing south, and Les Chantereines, facing east. Rather than bottling a single harvest, the wine is drawn from a perpetual blend started in 1986, so every release carries a trace of nearly four decades of vintages. Each bottling spends between five and six years on lees and is finished with a dosage of between zero and two grams per litre. Where the Millésime sets out to capture one season, Substance is designed to remove the vintage from the equation altogether, leaving an expression of place through time.
