The house farms around seventy-five parcels in total, and the single-site wines are made to show what each one does. The fruit is pressed gently, fermented with indigenous yeasts in used oak barrels, and bottled without filtration. After an extended stay on lees it is disgorged with a very low dosage, and the disgorgement date is declared on the label along with the year.\u003c\/p\u003e\n\u003cp\u003eBest given a little time in the glass, and it will keep developing in bottle.
