June 2021","description":"\u003cp\u003eNature de Craie is Laherte Frères' zero-sulphur Champagne, made from two barrels of Côte des Blancs Chardonnay.\u003c\/p\u003e\n\u003cp\u003eAurélien Laherte, who farms at Chavot in the Coteaux Sud d'Épernay, spent several vintages working towards a cuvée made without any sulphur additions, and in 2018 he arrived at a version he was happy to release. The juice was drawn from two premier cru terroirs in Vertus and Voipreux, at the southern end of the Côte des Blancs, where the chalk carries a little more clay. Laherte found that the keys to stability without additions were zero dosage and a full malolactic fermentation, both of which leave the wine chemically settled before bottling.
