Vines average 30 years. Two reserve vintages now go into the wine, making up 40 per cent of the blend, and 60 per cent of the material is barrel-aged. Aurélien Laherte ferments the juice naturally in a mix of vessels, including two 50-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Whatever the vessel, the wines stay on lees, and malolactic conversion is allowed to run partway, generally 60 to 70 per cent. This bottling was disgorged with 4.5 g\/L dosage.\u003c\/p\u003e\n\u003cp\u003eReady to drink and good for three or four years, longer in magnum.
