Both plots lie at the heart of Cramant's south-east-facing slopes on the flanks of the Butte de Saran, catching the first sun of the morning, and the deep root systems of the old vines combine with the grand cru chalk to give a wine of unusual density for the village. Winemaking follows the pattern used across the estate's single-terroir wines: spontaneous fermentation and malolactic conversion, 12 months in large Stockinger barrels and no filtration. This cuvée is then held at least eight years on lees in bottle, and this release was disgorged with 2 g\/L dosage.\u003c\/p\u003e\n\u003cp\u003eApproachable now and capable of long ageing, particularly in this format.
