Their soils carry more clay than the parcels behind the domaine's Longitude bottling, and the wine is accordingly built on textural volume as much as on tension. Larmandier-Bernier ferments with native yeasts, lets malolactic conversion happen naturally and works mostly in large-format casks, almost all of them now Stockinger oak from Austria. Nothing is filtered. The wine spends more than two years in bottle before disgorgement, and dosage is set at extra-brut levels — 3 g\/L in this case — at least six months ahead of release. This bottling is based on the 2018 harvest, with reserve wine drawn from a perpetual reserve started in 2004. The magnum format slows everything down again.\u003c\/p\u003e\n\u003cp\u003eReady now and unusually flexible at the table: fish, terrines, lemon chicken and most cheeses short of blue or strong washed-rind.
