In 2002 Pascal Agrapart sought and received permission to make a small quantity of wine with no chaptalisation, no sugar in the liqueur de tirage for the second fermentation, and no dosage at bottling. Omitting sugar from the tirage is normally contrary to appellation rules, which is why the dispensation was needed. In place of sugar he uses must from the same vineyards, so the wine is made entirely from estate-grown grapes. Because the natural sugars are lower, the alcohol does not climb the usual degree and a half during the second fermentation, and the wine finishes around 11.5 to 11.8% rather than the 12.5% of the rest of the range. The cuvée was formerly sold as Expérience, and it ages well.
