The fruit from Le Champ Bouton in Avize was fermented in tank, while the component from Les Bionnes in Cramant was vinified in 600-litre oak casks, a division Pascal Agrapart explains as barrels for the expression of minerality and tank for precision. The wine spent more than five years on lees before disgorgement in July 2024 and was dosed at 3 g\/L, so there is very little sugar to soften it.
