Minéral comes from two vieilles vignes sites more than fifty years old where the roots run straight into chalk bedrock: Le Champ Bouton in Avize and Les Bionnes in Cramant. The Avize fruit ferments in tank and the Cramant component in 600-litre oak casks, a split Pascal Agrapart explains as barrels for the expression of minerality and tank for precision. The wine spent more than five years on lees before disgorgement at 3.5 g\/L dosage. It is typically the saltiest wine in the range, vinous in the manner of white Burgundy but with an iodine edge particular to the Côte des Blancs.\u003c\/p\u003e\n\u003cp\u003eDrinking now and capable of a decade in magnum, it suits oysters, raw fish or roast chicken.
