A small portion is aged in oak. It takes its name from Thibaud IV, Count of Champagne, a crusader and troubadour credited with bringing the Chardonnay vine to the region. The wine spends around a decade on lees before release.\u003c\/p\u003e\u003cp\u003eServe at 10 degrees with langoustine, turbot or a mature comté.
