Oct 2023","description":"\u003cp\u003eChampagne Vouette et Sorbée Blanc d’Argile is a Chardonnay blanc de blancs from the Côte des Bar, a district planted almost entirely to Pinot Noir.\u003c\/p\u003e\n\u003cp\u003eThe Côte des Bar lies in the Aube, on Kimmeridgian limestone. In 2000 Bertrand Gautherot planted a small plot of Chardonnay in the cold, west-facing lieu-dit of Biaunes, and did so wild — without preparing the soil, among the native vegetation — using mass-selection cuttings from Anselme Selosse’s vines at Avize and Vincent Dauvissat’s Valmur grand cru in Chablis. That plot remains the base of the cuvée. From 2020 the wine also takes in fruit from the Fonnet vineyard and from Vouette itself, both replanted from Pinot Noir to Chardonnay some years ago. Indigenous yeasts ferment the wine in used 500- and 600-litre barrels, with a small portion fermented and raised in Georgian amphora. It spends roughly 15 to 18 months on lees in bottle and is disgorged by hand with zero dosage. The Biaunes vines yield only 15 to 20 hl\/ha, which accounts for much of the depth.\u003c\/p\u003e\n\u003cp\u003eReady now and capable of another five to eight years.
