Oct. 24","description":"\u003cp\u003eChampagne Vouette et Sorbée Blanc d’Argile is a Blanc de Blancs from the Côte des Bar, made from Chardonnay planted into uncleared ground on Kimmeridgian limestone.\u003c\/p\u003e\n\u003cp\u003eThe Côte des Bar, in the far south of Champagne, is overwhelmingly Pinot Noir country, so Bertrand Gautherot’s decision in 2000 to plant Chardonnay in the cold, west-facing lieu-dit of Biaunes was contrary at the time. He planted it wild, without preparing the soils and among the native vegetation, using massal-selection cuttings from Anselme Selosse in Avize and Vincent Dauvissat’s Valmur vineyard in Chablis. The Biaunes vines yield only 15 to 20 hl\/ha, which accounts for much of the depth here. The cuvée now also draws on the Fonnet vineyard and on Vouette itself. Indigenous yeasts ferment the wine in used 500- and 600-litre barrels, with a small portion in Georgian amphorae, and it spends roughly 15 to 18 months on lees before being disgorged by hand with zero dosage.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and rewarding several years more.
