Extrait takes its name from the French for extract, which describes the method: a barrel's worth of wine selected from a single harvest. The proportions follow whatever was picked that year, generally landing near 60 per cent Pinot Noir and 40 per cent Chardonnay, and the parcels are not fixed either, though the Chardonnay almost always comes from Biaunes and the Pinot Noir often from the Portlandian Sorbée vineyard. Gautherot selects by taste rather than by plan. The wine spends eight to nine years on lees and is disgorged by hand.\u003c\/p\u003e\n\u003cp\u003eDrinking now and holding for years yet.
