Disg. 18 Nov 2021","description":"\u003cp\u003eChampagne Vouette et Sorbée Saignée de Sorbée is a zero-dosage rosé made by maceration, closer in character to a light sparkling red than to a conventional pink Champagne.\u003c\/p\u003e\n\u003cp\u003eBertrand Gautherot farms biodynamically at Buxières-sur-Arce in the Côte des Bar, the southern, Pinot-dominated end of Champagne. The Sorbée plot is a small plateau above the slope on which Vouette sits, almost pure Portlandian limestone, which is rare in the region. The site is nearly flat with a slight south-westerly aspect, and Gautherot harvests it in several passes so that only the smallest bunches and ripest fruit go into this cuvée. The vines are between thirty-two and fifty years old, planted from an old massale selection taken from Domaine Lafarge in Volnay, and the soils have been worked without herbicide since at least the 1860s, which Gautherot credits with making the shift to biodynamics straightforward. Uncrushed whole grapes were macerated in an open wooden vat before pressing, the wine was vinified without sulphur and aged ten months in 400-litre barrels, then disgorged with no dosage.\u003c\/p\u003e\n\u003cp\u003eDrink now and over the next five years.
