The Sorbée plot is a small plateau above the slope on which Vouette sits, almost pure Portlandian limestone, which is rare in the region, and almost flat with a slight south-westerly tilt. The vines are between 32 and 50 years old, planted with old mass-selection cuttings from Domaine Lafarge in Volnay, and the soils have been cultivated since at least the 1860s without herbicide, which Gautherot credits with making the shift to biodynamics straightforward. He harvests in several passes, keeping only the smallest bunches and ripest fruit for this cuvée. Uncrushed whole grapes macerate in an open-top wooden vat before pressing, and the wine ages ten months in 400-litre barrels with no sulphur added.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth three or four years.
