Voices of Angels looks beyond the Barossa to the Adelaide Hills, a higher, cooler region in the Mount Lofty Ranges where Shiraz ripens slowly and retains natural acidity and a peppery, spicy character. The wine is Shiraz co-fermented with around 5.5% Riesling, a technique borrowed from the Côte-Rôtie tradition of fermenting Syrah with a little white grape, which helps stabilise colour and adds aromatic lift. The result is a finer, more perfumed style of Shiraz than the estate's Barossa wines.
