Limestone, marl and sandstone soils, a very dry growing season and constant sea air give Mourvèdre the long, slow ripening it needs, and appellation rules require a minimum of half of it in both the reds and the rosés. Bandol rosé is a serious, gastronomic style rather than a pale aperitif wine, usually made by direct press or a short maceration, with Grenache and Cinsault filling out the Mourvèdre.
