Mourvèdre is late ripening and demanding, and it is the combination of poor limestone and sandstone soils, terraced south facing restanques and moderating sea air that lets it ripen fully here when it struggles elsewhere in France. The rules require a minimum of eighteen months in wood before release, traditionally in large old foudres rather than barriques, so the oak lends structure and slow oxygenation rather than flavour.
