Climens farms a single block of vines around the château on that plateau, planted solely to Sémillon, which is unusual even here. Harvest runs as a series of passes, the pickers returning again and again to take only berries touched by botrytis cinerea, the noble rot that shrivels the fruit and concentrates what is left inside it. Fermentation and ageing then take place in barrel. The estate has been farmed biodynamically for well over a decade and holds Demeter certification.\u003c\/p\u003e\n\n\u003cp\u003eIt is a natural partner for foie gras, blue cheese or a simple fruit tart, and should be served well chilled.
