That limestone is the source of the lively, almost mineral freshness that sets the best Barsacs apart. Semillon is the only grape planted, picked by hand over several selective passes so that only botrytised berries reach the press, then fermented in barrel. The 2011 season began with a hot, dry spring and early growth; a cooler, wetter summer followed, and a warm, stormy spell at the end of August brought an early onset of botrytis. Picking began in early September in ideal conditions, giving a generous and well-balanced harvest.\u003c\/p\u003e\n\u003cp\u003eChill to around 10 degrees and pour in small glasses.
