The vines lie on the Clos Bonneau, where red earth scattered with pebbles sits over that limestone base, and the relatively cool soils give the wine mineral steel to offset the late-picked fruit. The clos is planted almost entirely to Sémillon, with Sauvignon Gris, Muscadelle and Sauvignon Blanc, and includes four hectares of century-old vines. Jean-Marie Guffens picks under the first sun rather than in the morning mist, in six passes over ten days.
