Barsac has its own appellation within Sauternes, and its shallow soils over limestone give sweet wines with a firmer line than those grown on the gravel further upriver. Where the cold waters of the Ciron meet the warmer Garonne, autumn fog forms and settles in the vineyards, encouraging botrytis cinerea, the noble rot; pickers then move through the rows repeatedly over several weeks, taking only berries that have shrivelled.
