Its name is thought to come from the Gascon word for knife, a nod to the fresh, cutting acidity that sets the wine apart from its richer Sauternes neighbours. The vineyard lies on clay over limestone, and is planted mainly to Sémillon with Sauvignon Blanc and a little Muscadelle. Grapes affected by noble rot are picked by hand in several passes, then fermented and matured in French oak barrels. The 2009 vintage is regarded as one of the great recent years for sweet Bordeaux.\u003c\/p\u003e\n\u003cp\u003eServe well chilled, at around 9 to 11 degrees. Classic matches are foie gras, blue cheese such as Roquefort, fruit tarts and crème brûlée, and it is also very good with spicy dishes.
