Opalie is Coutet's version, a recent addition to the range, blending Sauvignon Blanc and Sémillon from selected parcels on the estate's limestone plateau. The fruit is picked earlier in the season, before botrytis cinerea has any chance to settle and while natural acidity is still high, and the wine is then fermented and matured in oak barrels.
