It is drawn from the oldest parcels on the property and is dominated by Mourvedre, the late ripening variety that Beaucastel championed when most of the appellation had turned away from it, filled out with Syrah and old vine Grenache. Farming is biodynamic, the whole harvest passes through the estate's traditional flash heating before fermentation, and ageing takes place in large old oak foudres.
