This is the oldest wine growing part of Bordeaux and the only district in the region with a classification covering both red and white wine, drawn up for the Graves in the 1950s. The deep gravel here drains freely and holds warmth, which is what allows Cabernet to ripen so close to the city. The white is a blend of Sauvignon Blanc and Semillon, barrel fermented and matured on lees with regular stirring, in the manner that has become standard for serious white Bordeaux.
