The Vieilles Vignes cuvée sets a threshold of at least 70 years of vine age and takes only the best plots. Many of these vines yield just a few bunches each, which is much of the reason for the wine's intensity and structural weight. A scattering of Pinot Beurot, the local name for Pinot Gris, is interplanted in these rows and is picked and vinified alongside the Pinot Noir. Fermentation used 70 per cent whole bunches and the wine was raised in 45 per cent new oak, making it deeper and firmer than the estate's Classique.\u003c\/p\u003e\n\u003cp\u003eBuilt for the long haul, and worth a decade before opening.
