Where the classic Pibarnon rosé is direct-pressed and bottled early, Nuances takes a longer road: seven days of skin contact, then the juice run off saignée-style without pressing, so nothing hard or phenolic enters the wine. Fermentation and ageing proceed with natural yeasts in a combination of Italian amphorae and a 30-hectolitre Stockinger foudre, and the élevage is considerably longer than for the standard bottling. The result is a rosé of real depth, potent and spicy rather than delicate, and one that behaves more like a white wine of substance than a summer drink.\u003c\/p\u003e\n\u003cp\u003eEnjoyable now and able to develop over several years.
