The blend is 90 per cent Mourvèdre and 10 per cent Grenache, taken only from the oldest vines and finest terraces of the property, including Bel-Air, La Grande Paguette, La Falaise, Les Pointes Blanches, Le Col and Les Dolmens. Altitude, sea air and limestone and clay soils together give a freshness rare among Mediterranean reds. The vineyard is farmed organically and biodynamically under chef de culture Éric Schladenhaufen, while cellarmaster Marie Laroze works with wild yeasts, large-format oak, low sulphur and small terroir-based batches. The wine fermented in concrete with about 25 per cent whole bunches, then aged 20 months in new and used foudres.\u003c\/p\u003e\n\u003cp\u003eGive it three to five years and expect two decades in magnum.
