The limestone plateau gives fruit of real intensity while holding acidity, and Guffens is convinced the site can produce ageworthy whites, which is why the wine is released with bottle age already behind it. Conscious of the natural richness the south provides, he vinifies only the purest and tensest free-run juice. Ageing is deliberately restrained: eight months in barrel, a quarter of it new, followed by a further ten months in concrete vat on fine lees. The wine is broad and mouth-filling, with nutty complexity and a smoky edge, but the acidity holds the shape.\u003c\/p\u003e\n\u003cp\u003eDrinking beautifully now.
